Wheat Free Buckwheat Sourdough
★ COMING SOON ★
$18

A naturally leavened buckwheat loaf raised with our dedicated non-wheat starter — rice and sorghum flour, never wheat. Dense, nutty and properly fermented, with the same slow rise as every loaf we bake.
Wheat free, but not gluten free — please read before ordering.
This loaf is made with a dedicated non-wheat starter of rice and sorghum flour and contains no wheat, barley or rye ingredients. It has not been tested or certified to any gluten free standard.
It is baked in a home kitchen that also bakes with wheat flour. I wash down thoroughly and take real care to prevent cross contamination, but in a shared kitchen that cannot be guaranteed 100% of the time.
Depending on your level of gluten intolerance, please sample with caution. Not suitable for anyone with celiac disease.

Estimated from standard values for the ingredients above, based on 1.75 cups of water and a loaf cut into 12 slices, and including the optional honey. Long fermentation consumes a small share of the available carbohydrate, and much of the fiber from psyllium husk passes through undigested, so these are a conservative estimate rather than a laboratory analysis.
